JK, JK, I mean, one of the things that’s clear about Sanji is that he’s actually incredibly emotional, so him using a cigarette to calm his nerves because while he is in the monster trio, he also isn’t a totally crazy, battlethirsty dumbass like Luffy and Marimo. He’s actually aware of the threat he faces and needs to settle his stomach before fighting those who are basically gods.
I also think that Zoro started drinking more post-Mihawk, he also stopped smiling and laughing as much, it overall fucked with his head. Which is why Post-TS he seems more relaxed, he’s had his chance to train with Mihawk and has hit a position of peace with him, there’s less insecurity.
